The Best Cilantro Lime Chicken Thighs

Ingredients

  • 3 lbs. boneless, skinless chicken thighs
  • cup good quality olive oil
  • 2 limes juice and zest
  • 6 cloves garlic, minced
  • 1 tablespoon honey
  • ¼ cup cilantro, finely chopped
  • 1 tablespoon ground chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon sea salt
  • ½ teaspoon ground pepper
  • 2 tablespoons butter

Instructions

  • In a large bowl mix together the olive oil, garlic, honey, lime juice, zest, chopped cilantro, chili powder, cumin and salt pepper to taste. Add the chicken thighs to the marinade and stir to coat well. Marinate the chicken for 2 hours in the refrigerator.
  • Preheat oven to 375 degrees F.
  • After the chicken is done marinating, add the butter to a large cast iron skillet over medium high heat. Sear the chicken on each side, about 2 minutes per side. Pour any remaining marinade over the chicken. Transfer the oven proof skillet to the oven and bake uncovered for 15 minutes, or until an internal temperature reaches 165 degrees F. Serve with rice and beans, or desired sides. Enjoy!
