Korean Inspired Street Tacos with Sweet & Spicy Caramelized Kimchi

Ingredients

  • 2 tablespoons vegetable oil
  • 8 oz ground beef
  • 2 ½ tablespoons brown sugar
  • 3 teaspoons sesame oil, divided
  • ½ teaspoon garlic powder
  • 2 tablespoons soy sauce
  • ¼ teaspoon red pepper flakes
  • 3 cloves garlic, minced
  • 1-2 teaspoons fresh minced ginger
  • 12 flour tortillas
  • 1 cup good quality kimchi
  • 1 teaspoon sugar
  • onion, cilantro, avocado and sriracha for assembling

Instructions

  • In a small bowl, whisk together the brown sugar, 2 teaspoons sesame oil, soy sauce, ginger, garlic powder and red pepper flakes. 
  • Heat the oil over medium high heat and add the minced garlic. Cook for 1 minute until fragrant and then add the ground beef. Breaking up the beef as it cooks, cook until browned about 5-7 minutes. ;Stir in the sauce mixture into the beed and stir until well combined. Cook until the sauce thickens. Season with salt and pepper to taste.

For the Caramelized Kimchi:

  • Heat the remaining 1 teaspoon sesame oil over medium high heat. Add the kimchi, a teaspoon of sugar and cook until the kimchi begins to caramelize, about 3-5 minutes. Serve tacos with diced onion, fresh cilantro, sriracha and kimchi. Enjoy!!!
