Berry Delicious Superfood Smoothie Bowls with Honey Almond Granola

These berry delicious smoothie bowls are packed full of superfoods, sure to fill you up and leave you feeling great! Topped with chia seeds, fresh fruit and homemade honey almond granola, these bowls are the perfect antioxidant rich treat!

Ingredients

For the Berry Delicious Smoothie Bowls:

  • 1 ½ cup frozen triple berry blend (blueberries, blackberries and raspberries)
  • ½ cup oat milk or almond milk
  • 2 banana's, divided
  • ¼ cup Greek yogurt
  • 3 tablespoons honey to sweeten, or to taste
  • 2 teaspoons vanilla extract
  • 1 tablespoon chia seeds to garnish
  • 1 tablespoon coconut flakes to garnish
  • ½ cup homemade almond honey granola, to top
  • additional fresh fruit to top (optional)

For the Honey Almond Granola:

  • 4 cups old fashioned rolled oats
  • 1 teaspoon salt
  • ¾ cup melted coconut oil
  • ½ cup honey
  • ¾ cup pure maple syrup
  • 1 tablespoon pure vanilla extract
  • 1 cup slivered almonds

Instructions

Granola:

  • Preheat oven to 325 degrees. Line two baking sheets with parchment paper. Set aside.
  • In a large bowl, mix together the oats and sea salt. Add melted coconut oil, maple syrup, honey and vanilla. Stir in almonds. Divide the granola between the two pans and spread out evenly. Bake for 12 minutes. After 12 minutes, carefully stir the granola and move it around, flattening it back out evenly. Bake for an additional 8-10 minutes until toasted (keep a close eye on it so it doesn't burn!) Allow to cool for 15-20 minutes. After the granola has cooled, start on the smoothie bowls.

Smoothie Bowls:

  • In a blender add the frozen berries, 1 banana, oat milk, Greek yogurt, honey and vanilla. Blend on high for 2 minutes, until fully blended and smooth. Divide the smoothie between two bowls and top with chia seeds, remaining sliced banana, coconut flakes, homemade granola and additional fruit of choice, if desired. Enjoy!!

Notes

  • The homemade honey almond granola keeps for 2 months. Store the remaining granola in an airtight container. 
  • If you want an even thicker smoothie, freeze the banana that goes in the smoothie! The frozen banana will thicken the smoothie and give it more of an ice cream consistency. 
  • The toppings are endless! Feel free to add what you prefer.
