Spiced Maple Pecan Granola

Spiced Maple Pecan Granola is the perfect granola to add to your morning yogurt, in a parfait, as a snack, or even as a cereal! Spiced with cinnamon and sweetened with vanilla and maple, this spiced maple pecan granola is a real treat.

Ingredients

  • 4 cups old fashioned rolled oats
  • ½ cup oat bran (optional)
  • 2 teaspoons ground cinnamon
  • 1 ½ teaspoons salt (or to taste)
  • ¾ cup melted coconut oil
  • ½ cup pure maple syrup
  • 1 cup brown sugar
  • 1 tablespoon pure vanilla extract
  • ½-1 cup chopped pecans

Instructions

  • Preheat oven to 325 degrees. Line two baking sheets with parchment paper. Set aside.
  • In a large bowl mix together the oats, oat bran (if using), cinnamon and sea salt. Add melted coconut oil, maple syrup, brown sugar and vanilla. Stir in chopped pecans. Divide the granola between the two pans and spread out evenly. Bake for 15 minutes. After 15 minutes, carefully stir the granola to move it around and bake for an additional 8-10 minutes until nice and toasted (keep a close eye on it so it doesn't burn!) Allow the granola cool for 15 minutes. As it cools it will harden. Break into pieces and enjoy!
