Christmas Morning Gingerbread Waffles

Ingredients

  • 3 cups flour
  • 4 teaspoons baking powder
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon clove
  • 1 teaspoon salt
  • 1 tablespoon fresh minced ginger (from squeeze bottle) *or 1 ½ teaspoon dried ginger
  • 4 eggs, beaten
  • ½ cup packed brown sugar
  • 1 cup canned pumpkin puree, not pumpkin pie filling
  • 1 ¼ cups half and half
  • ½ cup molasses
  • 1 stick melted butter (8 tablespoons)
  • 1 tablespoon pure vanilla extract

Instructions

  • Spray waffle iron with non stick cooking spray. Preheat to medium high heat.
  • In a large bowl sift the flour, baking powder, cinnamon, ginger, nutmeg, clove and salt until just combined.
  • In a medium bowl combine the eggs, brown sugar, pumpkin, half and half, molasses, vanilla and melted butter until fully combined.
  • Stir until just fully combined, but don't over mix! The batter will be clumpy- thats ok. Allow to sit for 10 minutes before cooking.
  • Using 1 cupfuls, pour the batter into the hot waffle iron. Cook until golden brown and cooked through, about 5 minutes. Repeat with remaining batter. Serve with homemade whipped cream and maple syrup. Enjoy!
