Spiced Maple Pecan Granola is the perfect granola to add to your morning yogurt, in a parfait, as a snack or even as a cereal! Spiced with cinnamon and sweetened with vanilla and maple, this spiced maple pecan granola is a real treat!
I have tried so many granola recipes over the years, never truly being satisfied with the end result. Honestly, most granola out there is super bland… or too sweet… or not sweet enough. So, I decided to experiment one day and the end result was this seriously addicting granola. The best part? It’s everyone’s favorite! If you want to make the best granola you will ever try- then this is the not so secret recipe you’re going to want to share with everyone you love.
Spiced Maple Pecan Granola Details:
This granola is seriously so easy! Say goodbye to store bought granola because this homemade spiced maple pecan granola is better than anything you’ll find in a store. Plus, it’s cheaper! Have you ever seen how much they charge for granola?! Not only is it usually way over priced, but the bagged stuff is usually not as great as it looks. This is one granola that not only looks delicious, but isn’t a huge disappointment when you taste it either. Another winning factor? It’s not loaded with preservative and strange ingredients you can’t pronounce.
Not to mention your house will smell absolutely amazing. I mean, what smalls more amazing than cinnamon, vanilla, maple and pecans baking? Yankee candle has nothing on this granola! Seriously, there are so many wins!
Ingredients you need for this Spiced Maple Pecan Granola:
- old fashioned rolled oats– the base for the granola and what makes granola, granola! Oats are a great source of fiber and rich in antioxidants. We are big oat consumers in our home and love the nutrients good ol’ oats add to our diets.
- oat bran (optional)- The oat bran adds an extra layer of crunch and heartiness.
- ground cinnamon– cinnamon is the main spice in this maple pecan granola, adding a lovely
- salt– always an important flavor enhancer, the salt will bring out all the cinnamon maple goodness! Don’t be afraid to salt your granola; no one wants a bland granola mix. However, If you’re sensitive to salt you can scale it back to your preference.
- coconut oil-I love the subtle coconut flavor coconut oil gives this granola. It’s also the perfect oil for toasting oats!
- pure maple syrup– you want the good stuff here- no fake maple syrup. The richness of the pure maple just can’t be beat!
- brown sugar– I mean, every good granola, or oatmeal, just needs brown sugar! The molasses in the brown sugar adds a wonderful depth of flavor while adding that delicious brown sugar sweetness and crunch we all love!
- pure vanilla extract– again, no fake stuff here! Imitation vanilla has nothing on the real stuff. This recipe uses quite a bit of vanilla than what you may normally see in granola recipes, but it’s such a game changer! Don’t be afraid to use all the vanilla it calls for!
- chopped pecans– The pecans are honestly my favorite part. Mixed with the brown sugar and maple they get so toasty and delicious. You definitely don’t want to leave them out!
How to make the granola:
In as little as 5 minutes of prep time and one bowl to mix it all up in- this spiced granola is so quick, easy and you wont make a huge mess in the kitchen. Another little secret? It’s kiddos approved! As a busy homeschooling mom- there’s nothing like an easy one bowl treat that requires little effort and cleanup.
Here’s a rundown:
- Line two cookie sheets with parchment paper. I love parchment paper for baking, and this is one recipe that definitely needs it! No sticking or burning in the pan, here!
- In a large bowl you mix together the oats, oat bran, cinnamon and sea salt. Next, you will add melted coconut oil, maple syrup, brown sugar and vanilla. Stir in the chopped pecans and divide the granola between the two prepared pans. Spread the granola out evenly and bake for 15 minutes. After 15 minutes, you will carefully stir the granola, flattening it back out evenly, and bake for an additional 8-10 minutes until nice and toasted.
- Let the granola cool for 10 minutes, break into pieces and enjoy!
Spiced Maple Pecan Granola Tips:
This recipe calls for oat bran which is totally optional. When I was creating this recipe I had some oat bran on hand that needed to be used, so I added it in, but I have made it with and without oat bran and both ways are equally delicious!
This granola is so versatile, so if you want to scale back on the sweetness, salt, or even switch up with nuts you totally can! Almonds would be a delicious substitute for the pecans, or even pumpkin seeds! Feel free to make it your own.
Can I add dried fruit? I have been wanting to try this recipe with some dried cranberries or golden raisins. I just know it would be delicious! If you do however add dried fruit to the recipe, just make sure to toss the fruit in after the granola is finished baking. Otherwise, you will get rock hard pieces of fruit. Parchment paper is a lifesaver with this recipe. I would not recommend trying to make this granola without it! Because the granola is so sticky, the sugars would burn on a traditional baking pan without it.

Spiced Maple Pecan Granola
Ingredients
- 4 cups old fashioned rolled oats
- ½ cup oat bran (optional)
- 2 teaspoons ground cinnamon
- 1 ½ teaspoons salt (or to taste)
- ¾ cup melted coconut oil
- ½ cup pure maple syrup
- 1 cup brown sugar
- 1 tablespoon pure vanilla extract
- ½-1 cup chopped pecans
Instructions
- Preheat oven to 325 degrees. Line two baking sheets with parchment paper. Set aside.
- In a large bowl mix together the oats, oat bran (if using), cinnamon and sea salt. Add melted coconut oil, maple syrup, brown sugar and vanilla. Stir in chopped pecans. Divide the granola between the two pans and spread out evenly. Bake for 15 minutes. After 15 minutes, carefully stir the granola to move it around and bake for an additional 8-10 minutes until nice and toasted (keep a close eye on it so it doesn't burn!) Allow the granola cool for 15 minutes. As it cools it will harden. Break into pieces and enjoy!
