These gingerbread waffles are perfection. Not overly sweet, with just the right amount of spice and we just can’t get enough of them!
Are you ready for Christmas?! This year we are overly excited for the holiday season. I mean, we have had our Christmas decoration up since November, which has never happened.
After the year our world has seen, its beautiful to see people cling to hope and joy in the midst of uncertainty. The thing about joy and hope is that its a choice; you choose to hold on to joy and hope despite what the world looks like around you. Joy is so much more than happiness. Happiness is fleeting- joy is so much deeper because its not dependent on our circumstances like happiness is. Its much, much deeper. Its the way we align our hearts and minds. I believe you can have joy through every season and every storm. But its a choice you have to make and hold onto in the face of darkness.
We have decided for the month of December, to take a break from our traditional homeschooling and just focus on the season of Christmas and what it means for us.
It has been such a beautiful blessing to slow down, realign our focus on Jesus, family, traditions and just making beautiful memories together. Each year Christmas is so fleeting and I always feel like we never enjoyed it quite enough. This year is different and it has been such a joy.
So before Christmas is soon gone, lets talk about gingerbread.
I mean, what could possibly be more Christmas-y than gingerbread?! Gingerbread is one of those holiday flavors I feel like we never enjoy quite enough before it disappears again until the next holiday season. This year though, I am on a mission to enjoy all the goodness of gingerbread, and these waffles are the perfect gingerbread fix.
These gingerbread waffles couldn’t be any easier, so lets get to it!
Here’s a quick rundown:
You start with basic pantry staples, like flour, baking powder and spices. Mixup all your dry ingredients in a large bowl and set aside.
Then you will whisk up all the wet ingredients: eggs, brown sugar, pumpkin, milk, molasses, vanilla and melted butter.
Slowly pour the wet ingredients into the bowl with the dry ingredients and mix just until fully combined. Don’t over mix! There will be clumps, thats ok!
Heat up an electric waffle iron to medium high and spray with nonstick cooking spray.
Pour about 1 cup full of batter into the hot waffle iron and bake until the waffles are done to your liking. For crispier waffles, cook for about 5-7 minutes, or until dark brown. Softer waffles about will take about 3-5 minutes, depending on how fast your waffle iron cooks.
Top with pure maple syrup, whip cream and serve!

Christmas Morning Gingerbread Waffles
Ingredients
- 3 cups flour
- 4 teaspoons baking powder
- 2 teaspoons cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon clove
- 1 teaspoon salt
- 1 tablespoon fresh minced ginger (from squeeze bottle) *or 1 ½ teaspoon dried ginger
- 4 eggs, beaten
- ½ cup packed brown sugar
- 1 cup canned pumpkin puree, not pumpkin pie filling
- 1 ¼ cups half and half
- ½ cup molasses
- 1 stick melted butter (8 tablespoons)
- 1 tablespoon pure vanilla extract
Instructions
- Spray waffle iron with non stick cooking spray. Preheat to medium high heat.
- In a large bowl sift the flour, baking powder, cinnamon, ginger, nutmeg, clove and salt until just combined.
- In a medium bowl combine the eggs, brown sugar, pumpkin, half and half, molasses, vanilla and melted butter until fully combined.
- Stir until just fully combined, but don't over mix! The batter will be clumpy- thats ok. Allow to sit for 10 minutes before cooking.
- Using 1 cupfuls, pour the batter into the hot waffle iron. Cook until golden brown and cooked through, about 5 minutes. Repeat with remaining batter. Serve with homemade whipped cream and maple syrup. Enjoy!
