These bright and flavorful cilantro lime chicken thighs are marinated in a simple and delicious marinade that is made using simple, fresh ingredients. The chicken thighs are then marinated for 2 hours, making these the most flavorful and juicy chicken thighs around!
Here is what you will need to get started:
- boneless chicken thighs
- olive oil
- garlic cloves
- honey
- lime
- fresh cilantro
- chili powder
- cumin
- salt and pepper
- butter

We love to eat these chicken thighs just as they are, but this chicken thigh recipe is so versatile and can be used in so many ways! Here are some ideas:

How to make Cilantro Lime Chicken:
Start on the marinade.
In a large bowl mix together the olive oil, garlic, honey, lime juice, zest, chopped cilantro, chili powder, cumin and salt pepper to taste. Add the chicken thighs and marinate in the refrigerator for 2 hours.
When the chicken is done marinating, preheat the oven to 375 degrees F.
Add the 2 tablespoons of butter to a large cast iron skillet or oven safe frying pan over medium high heat. Sear the chicken on each side, about 2 minutes per side. Pour any remaining marinade over the chicken. Bake uncovered in the oven for 15 minutes, or until an internal temperature reaches 165 degrees F. Serve with rice and beans, or sides of choice.

The Best Cilantro Lime Chicken Thighs
Ingredients
- 3 lbs. boneless, skinless chicken thighs
- ⅓ cup good quality olive oil
- 2 limes juice and zest
- 6 cloves garlic, minced
- 1 tablespoon honey
- ¼ cup cilantro, finely chopped
- 1 tablespoon ground chili powder
- 2 teaspoons ground cumin
- 1 teaspoon sea salt
- ½ teaspoon ground pepper
- 2 tablespoons butter
Instructions
- In a large bowl mix together the olive oil, garlic, honey, lime juice, zest, chopped cilantro, chili powder, cumin and salt pepper to taste. Add the chicken thighs to the marinade and stir to coat well. Marinate the chicken for 2 hours in the refrigerator.
- Preheat oven to 375 degrees F.
- After the chicken is done marinating, add the butter to a large cast iron skillet over medium high heat. Sear the chicken on each side, about 2 minutes per side. Pour any remaining marinade over the chicken. Transfer the oven proof skillet to the oven and bake uncovered for 15 minutes, or until an internal temperature reaches 165 degrees F.
