30 Minute Rustic Zuppa Toscana

Ingredients

  • 1 tablespoon olive oil
  • 1 lb. spicy Italian sausage
  • 2 large russet potatoes, sliced in half, and then chopped into ¼ inch slices
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups fresh kale, torn
  • 6 cups chicken broth
  • 1 ½ cup heavy whipping cream
  • 1 teaspoon garlic powder (optional)
  • salt & pepper to taste
  • freshly grated parmesan cheese, to serve

Instructions

  • In a large pot heat the olive oil over medium high heat. Remove the sausage links from the casings. When the oil begins to simmer, add the sausage. Using a wooden spoon, break the sausage links up and brown the sausage stirring often, about 8 minutes. Add the chopped onion and sauté until the onion begins to turn translucent, about 5 minutes more.
  • Next, add the minced garlic, sliced potatoes, garlic powder if using (I like mine extra garlic-y) and a few grinds of salt and pepper. Add the chicken stock to the pot and bring the soup to a simmer. Simmer for 10 minutes, or until the potatoes are cooked through and tender. Turn the heat to low and add the heavy whipping cream and kale. Adjust salt and pepper to taste. Serve with freshly grated parmesan cheese and crusty bread for dipping. Enjoy!
