Cinnamon Cranberry Pecan Puff Pastry Pinwheels

Ingredients

  • 1 sheet frozen puff pastry
  • 3 tablespoons butter, melted
  • ¼ cup cinnamon sugar
  • ½ cup finely chopped pecans
  • cup dried cranberries

Instructions

  • Preheat oven to 375 degrees F.
  • Before you begin, you can either allow one puff pastry sheet to thaw at room temperature for 35-40 minutes, until soft enough to work with, OR you can heat the frozen puff pastry sheet in the microwave for 15 second intervals until it softens up. Just be careful not to overheat the dough; if using the microwave method, heat JUST until the dough begins to soften and is easier to unfold.
  • Brush two tablespoons of butter (eyeball it) all over the pastry sheet then sprinkle with ¼ cup cinnamon sugar. Sprinkle all over with the chopped pecans and dried cranberries. Gently press mixture into the dough.
  • Starting at a short end, roll up the dough into a tight log like cinnamon rolls. Brush the remaining tablespoon of butter all over the log. Using a sharp kitchen knife cut the log into about 10-12 rolls. Place the rolls on a parchment lined baking sheet. If any of the filling fell out while cutting, gently press it back into the tops of the rolls.
    Bake for 15-18 minutes, or until lightly golden. EAT!
