Happy February first!! Can you believe its February already?! I sure can’t. To celebrate the month of love, I have a fun little cookie recipe for you today that you are sure to love! No pun intended. 😉
Actually, I have quite a few fun sweet treats coming this month that I am super excited to share. But until then, these amazing strawberry white chocolate chop cookies are the perfect sweet treat to ring in the month of February.
And we could all have more cookies in our life, right?! YES.

These cookies taste like strawberries and cream, but in cookie form! If you want a unique way to change up your cookie game, these strawberry white chocolate chip cookies are definitely it! Each cookie is full of buttery, chewy goodness, with the perfect hint of strawberry and white chocolate chunks to make them extra sweet.
Recently I saw this recipe on Frosting and Fettuccini , and I was so intrigued I just had to try them! And I am sure glad that we did. My family absolutely loved these cookies; plus they were super fun to make!

I know, I know… two sweet treat recipes back to back?! But these Vanilla Bean Strawberry White Chocolate Chip Cookies were too good not to share for the 1st of February. I have a feeling this month will have more sweet treats than normal (blame Valentines Day), which I am sure you all wont mind. But I DO have a lot of savory dishes hitting the blog soon as well. Think from scratch homemade pizza and some comforting wintery dishes. My goal is to post at least two recipes for you all a week, preferably three. But considering it takes A LONG time for each post, it’s hard promising three posts weekly.
Recently, on a blogger community I am apart of, food bloggers were commenting on how long it takes them for each recipe post. And guess what? I’m not crazy or just super slow. Everyone from top food bloggers to newer food bloggers spend roughly 8-10 hours per post. Which is where I land, too. More than just writing, blogging is learning SEO (search engine optimization), researching keywords, scheduling, promoting, creating pins, social media, campaigns, drafting, brainstorming, networking, web design, figuring out technical issues, all while creating a huge mess in the kitchen. Not to mention the photography that goes into it as well. It really goes on and on and on. There is so much to learn all the time, but I am so loving it!
Plus, I love sharing all of our tried and true family favorites with you all! It really makes me happy to hear how much someone loved a recipe. When blogging is overwhelming, those little encouragements go a long way indeed.

So without further ado, lets get to a quick rundown on these delicious cookies!
How to make Strawberry White Chocolate Chip Cookies:
For these strawberry white chocolate chip cookies, you’re going to want to use freeze dried strawberries. Trader Joe’s has an awesome little bag of freeze dried strawberries which is what I used. TJ’s also has an amazing vanilla bean paste in their spice aisle. Vanilla bean paste is one of my secret weapons when it comes to baking. Definitely worth buying some.
In a blender or food processor, you’re going to pulse the freeze dried strawberries into a powder while still keeping some chunks. This part is fun and smells so good! But while taking the lid off the blender, be careful to not breathe in the fine powder initially.
In a stand mixer fitted with a paddle attachment (or by hand with some muscle strength) beat butter, sugar, and strawberry powder on medium low speed until nice and smooth.
When the butter mixture is smooth, add the egg, egg yolk, vanilla extract, vanilla bean paste and mix again until the mixture comes together.
In the bowl with the wet ingredients, add the flour, baking powder, baking soda and salt. Mix until everything comes together. Add the white chocolate chips and gently mix a few more times until evenly distributed.
On parchment paper lined cookie sheets scoop out the dough using a cookie scoop or kitchen spoon and place the dough 2″ apart and chill for 15 minutes in the freezer before baking. Chilling the dough will help prevent spreading, but you don’t *have* to chill the dough.
Then bake!!
More Cookie Baking Tips:
For this recipe, and most cookie recipes, a secret to ensuring extra chewy cookies is to under bake the cookies slightly.
If you want these strawberry white chocolate chip cookies chewier, then bake the cookies for 15-16 minutes. The cookies will appear under baked, and super soft; but after they cool will stay nice and chewy.
For slightly crunchier cookies, bake these cookies for 17-18 minutes. As they cool, the cookies will harden and have a more crunchy, chewy texture.
These cookies are best the day of (isn’t every baked good?!) but store really well in an airtight container!

Strawberry White Chocolate Chip Cookies
Ingredients
- ¾ cup freeze dried strawberries *I used Trader Joe's brand
- 1 ½ cups granulated white sugar
- 1 cup (two sticks) butter, at room temperature
- 1 large egg yolk (whites discarded)
- 1 large whole egg
- 2 teaspoons vanilla extract
- 1 teaspoon vanila bean paste *can also be found at Trader Joe's
- 2 ¼ cups all purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- 1 cup white chocolate chips, or chopped white chocolate chunks
Instructions
- In a blender or food processor, pulse ¾ cups of the freeze dried strawberries into a powder while still keeping some chunks. After pulsing the strawberries, whisk together the strawberry mixture and sugar in the bowl of a stand mixer, or a large bowl.
- In the stand mixer fitted with a paddle attachment (or by hand with some muscle strength) beat the butter and strawberry sugar on medium low speed until nice and smooth. When the butter mixture is smooth, add the egg, egg yolk, vanilla extract, vanilla bean paste and mix again until the mixture comes together.
- In the bowl with the wet ingredients, add the flour, baking powder, baking soda and salt. Mix until everything comes together. Add the white chocolate chips and gently mix a few more times until evenly distributed.
- Preheat oven to 350 degrees F and line two cookie sheets with parchment paper.
- On parchment paper lined cookie sheets scoop out the dough using a cookie scoop or kitchen spoon and place the dough 2″ apart and chill for 15 minutes in the freezer before baking. Chilling the dough will help prevent spreading.
- For chewier cookies, bake at 350 degrees F for 15-16 minutes. The cookies will appear under baked, and super soft; but after they cool will stay nice and chewy. For slightly crunchier cookies, bake for 17-18 minutes. As they cool, the cookies will harden and have a more crunchy, chewy texture.
