I’m so excited to share this recipe with you all today. Peaches. Vanilla. Bourbon. Buttery cake like biscuit topping. What could be any better?! This vanilla bourbon peach cobbler is a delicious way to celebrate summer whether it be for a special occasion or a simple BBQ with friends and family. This is the most incredible, easy cobbler that is definitely worth turning that oven on for this summer.
So are you ready for the ultimate bourbon vanilla peach cobbler? Well my friend, you have found the holy grail of cobblers. I promise. Its THAT good. Unless you don’t like peaches…. in which case why are you reading a peach cobbler recipe? You could however change it up with strawberries or blueberries if you’re anti peaches. I’m sure that would be pretty amazing too. But this.. this is what cobbler dreams are made of.
What I love about this recipe is how easy and absolutely perfect it is for summer. The peaches are cooked in a simple syrup with notes of vanilla and bourbon and topped with the most delicious, buttery batter in the history of forever. If you’re looking for an easy, summer inspired dessert that will impress your guests, and make it appear like you baked all day in the kitchen, look no further! This peach cobbler is your new best kept summer dessert secret.
Summer has a way about it, doesn’t it? The long days and extra time to play are always a welcomed treat here in Nevada after a long, cold winter. When summer is in full swing, one of the many things I get excited for is the produce that is in season; fresh corn on the cob, watermelon and of course, peaches. There is nothing quite like a perfectly ripe peach on a hot summer day. They remind me of visiting my family in Georgia when we would take drives out into the country. Out there peach trees and pecan trees are in endless supply just waiting to be enjoyed.
The south has a way of making you slow down and just be. Watching the fireflies, talking for hours on the porch with some sweet tea, exploring all the small towns filled with quaint antiques and bakeries and all the rich history within will always be a favorite memory of mine. I don’t think I can ever eat a sun kissed peach without thinking about the Georgia countryside. And there are so many delicious ways you can enjoy them.
Until I can visit again, this peach cobbler is the perfect substitute. So without further ado, lets get baking!

Heres a quick run down of tips and tricks:
- For this recipe, I highly recommend using fresh, ripe peaches if possible. If they are hard to find, frozen peaches should work fine. Do not use canned peaches.
- You start by making a simple syrup with sugar, vanilla and bourbon. As the peaches cook, they create a syrup. The bourbon is optional but adds a lovely depth of flavor. If you don’t have bourbon, you can use extra vanilla extract.
- Unlike a crisp, which uses an oat topping, cobbler has more of a cake like topping.
- If the syrup is a bit on the runny side, you can add some cornstarch. Add 1 Tablespoon cornstarch to 1 Tablespoon water, until dissolved. Add to the peach mixture for a slightly thicker sauce.

Ingredients
- 4 cups peeled, cored and sliced fresh peaches
- 1 cup all purpose flour
- 1 tablespoon bourbon
- 1 tablespoon baking powder
- ½ teaspoon cinnamon
- 1 ¾ cups sugar, divided
- 1 teaspoon salt
- ¾ cup whole milk
- 1 stick (8 tablespoons) salted butter
Instructions
- Peel and slice the peaches. Discard the pits.;In a large saucepan, add the peaches, ¾ cup of the sugar, cinnamon, and bourbon. Cook over medium heat for 10-15 minutes until the sugar is dissolved and the peaches create a syrup. If the syrup seems a bit runny, see notes above for adding cornstarch.*
- In a medium bowl, whisk the remaining 1 cup sugar, flour, baking powder and salt. Gently add the milk.;In a large cast iron skillet, or an 8 X 8 baking dish, add the stick of butter and place in the oven. Preheat oven to 350 degrees. Take the pan out once the butter has melted, about 5 minutes.
- Carefully removing the baking dish from the oven, pour the batter over the melted butter. Add the peaches and syrup over the top of the batter. Bake in the oven until lightly golden brown and a tooth pick inserted in the middle comes out clean, about 35 minutes. Allow to cool for 15 minutes. Serve with vanilla ice cream. Enjoy!
