    The Best Cinnamon Apple Pie Bars with Streusel

    Cinnamon Apple Pie Bars with an extra buttery streusel topping and shortbread crust. Basically a traditional apple pie but in the form of a bar. If you’re an apple pie fan, you’re definitely going to love how easy and delicious these are!

    These Cinnamon Apple Pie Bars are quite literally the BEST apple pie bars ever. I mean, they are dangerously delicious. Like REALLY dangerous.

    Have you recently gone apple picking and spent way more than you normally would have on apples? Well, you’re in luck because these bars are the perfect recipe to try this fall season. And if you haven’t had the chance to go apple picking… you will definitely want to go to the store soon so you can make these wonderful cinnamon-y, buttery, apple-y pie bars ASAP.

    I didn’t intend to post another dessert recipe right after those amazing Thick and Chewy Pumpkin Pecan “Snickerdoodle” Cookies this week, but here we are. Its fall time guys and my baking game is on overdrive. I promise I have some exciting recipes coming soon that aren’t completely loaded with sugar and butter. Just bare with me… but in the meantime…

    These. Pie. Bars. Are. SO. GOOD.

    Pumpkin everything is definitely my game come autumn, but I feel like apple desserts often get forgotten about. Apple desserts are just as good, if not (dare I say it…) even better than their pumpkin spice cousin. These Cinnamon Apple Pie Bars are definitely one of my family’s all time favorite fall treats that rival even our most cherished pumpkin desserts.

    What I love about these bars is that you get all the goodness from a traditional apple pie but with way less fuss. Don’t get me wrong… I love making homemade pies from scratch, but sometimes you just need something easy. So if you’re looking for an easy apple dessert to make this season, these Cinnamon Apple Pie Bars are going to be your new best friend.

    The BEST Cinnamon Apple Pie Bars

    Ingredients

    • 2 cups all purpose four
    • ½ teaspoon salt
    • 1 cup (2 sticks) salted butter
    • 3-4 tablespoons ice water
    • 5 large apples of choice (I used fuji) peeled, cored and thinly sliced
    • 1 cup sugar
    • 2 teaspoons cinnamon
    • ¼ teaspoon ground clove

    For the Streusel Topping:

    • 1 cup all purpose flour
    • ½ cup salted butter
    • 1 cup sugar

    Instructions

    • Preheat oven to 350 degrees. Place 2 cups flour and salt in a food processor and pulse until blended. 
    • Next add 1 cup butter and pulse until the mixture is coarse, like small peas. If needed while pulsing, add just enough ice water to form moist crumbs. Press the mixture into the bottom of a buttered 13x9-in baking pan. Bake until edges are lightly browned, 20-25 minutes. 
    • Remove crust from oven. In a large bowl, combine the apples, 1 cup sugar, cinnamon and ground cloves. Stir well. Spoon the apples over the crust.

    For the Streusel: 

    • Place 1 cup flour, ½ cup butter and 1 cup sugar in food processor and pulse until coarse crumbs form. Sprinkle streusel over apples. Bake until the top is golden brown and apples are tender, 55-65 minutes. Allow to cool before cutting. Cut into bars, top with vanilla bean ice cream and enjoy!
