This delicious Spiced Pork Roast with Pomegranate Sauce is easy and full of so much flavor! Notes of warm cumin and cinnamon are paired with a sweet and tangy pomegranate glaze that is truly irresistible.
This month we have been making A LOT of cookies and various baked goods.. so I’m excited to share a delicious and easy dinner recipe with you all today. While pomegranates are in season, this is a great wintertime meal; but really it’s great anytime of the year a well!
Lately we just can’t get enough of all the delicious fruits that are in season right now. Cranberries, oranges, and of course pomegranates! After make that amazing Christmas Sangria, I knew I wanted to use the remaining pomegranates we had on hand for this delicious pork roast.
This Spiced Pork Roast with Pomegranate Glaze never disappoints!
If you’re looking for a great dinner to make for the holidays, this is it! Its so easy and has that fancy, gourmet feel that makes dinner feel extra special.
Another added bonus?! Pomegranates are SO good for you! Full of antioxidants and anti inflammatory benefits, there is definitely much to be gained by enjoying these delicious fruits regularly.
So lets get to the basics for this pork roast!
Here’s a quick rundown:
For this recipe I recommend using a high quality brand of pomegranate juice such as POM wonderful. Because pomegranate is such a key ingredient here, you really want the best quality juice you can find.
You will start by making a rub for the pork. Warm spices like cumin and cinnamon create a flavorful base for this recipe.
The pork will then roast in the oven for about an hour, turning once during the roasting process.
When an internal temperature reaches between 145-150 degrees F , you will then take the roast out to rest while you start on the pomegranate sauce.
Over medium high heat start by simmering the pomegranate juice so that it reduces slightly.
Add the remaining ingredients for the sauce, and season to taste with salt.
When the pork is done resting, about 15 minutes, serve with the warm pomegranate sauce over each slice. Enjoy!!

Spiced Pork Roast with Pomegranate Sauce
Ingredients
For the Pork Rub:
- 2 lb. pork sirloin tip roast
- ¾ teaspoon ground cumin
- ¾ teaspoon ground coriander
- ½ teaspoon ground cinnamon
- ½ teaspoon garlic powder
- 1 teaspoon salt
- ¾ teaspoon black pepper
For the Pomegranate Sauce:
- 1 cup good quality pomegranate juice
- 1 tablespoon brown sugar
- ¼ cup red wine
- 2 tablespoons butter
- 2 teaspoons cornstarch
- salt and pepper, to taste
Instructions
- Preheat oven to 400 degrees F.
- Stir together cumin, coriander, pepper, cinnamon, garlic and salt and pepper in a bowl. Pat pork roast dry and rub spice mixture all over the pork until evenly coated.
- Place the pork in a roasting pan and roast at 400 degrees for 35 minutes. After 35 minutes, turn the pork over, and allow to roast for an additional 30 minutes, or until an internal temperature reaches between 145-150 degrees. Take out of the oven and allow to rest for at least 15 minutes. Start on the sauce.
- In a medium sauce pan, add pomegranate juice and gently boil over moderately high heat until reduced to about ⅔ cup, about 3 minutes. In a measuring glass, dissolve the 2 teaspoons of cornstarch with the wine, and whisk until no clumps remain. Add the brown sugar and wine slurry to the pomegranate juice. Simmer for a few minutes. Add the butter, until dissolved and season to taste with salt and pepper. Serve the warm pomegranate sauce over the carved pork slices. ENJOY!
