    Start off your New Years Eve celebrations with these Raspberry Rosé Champagne Floats! This dessert cocktail is about as easy as it can get and so incredibly refreshing and dreamy!

    Wow, what a crazy year 2020 has been, right?! I mean it couldn’t have been any stranger…

    I’m going to warn you now, I have a feeling this post is going to get a bit deep and reflective. I mean, 2020 was a lot.

    BUT first, I have a super fun, super easy and really yummy New Years treat for you to make ASAP.

    Say hello to these pretty Raspberry Rosé Champagne Floats…

    Somehow, this year was both the LONGEST year as well as the fastest year ever. Looking back to last December feels like an eternity ago. So much has happened in our world in just one short year. Yet, it went by REALLY fast at the same time. So strange how time works like that. Perhaps its because I’m a mother and so much changes in a year of childhood development.

    Driving around yesterday, it really hit me hard how much I long for the world to go back to normal. Things felt so simple just a year ago. Now, so much has changed and the simplest of things have become so complicated. How I long to just sit in a cafe without a mask. To go to the movies and have my daughter play in the play area at Chick-Fil-A without it being roped off. To ride the ferris wheel and go bowling and wait in a huge long line at Disneyland to get a dole whip… to just enjoy all the little things we took for granted. Like that time when we were able to just hop on a plane and enjoy a pint in the oldest pub in Ireland…

    The world has changed, and I know I’m not the only one who is wondering if it will ever truly go back to the way it was. But I sure pray it does.

    So much of life is vastly different than it was twelve months ago. I have to admit… While everyone is repeatedly using the phrase “new normal”, I refuse to accept this is our permanent normal. We need to be responsible, yes... but I have to believe our world will go back to simpler times, although everything looks like it never will. None of this is normal and living in a world like this will never be normal.

    For the sake of my children’s future, I have to believe there will be a time when they don’t have to worry about living; a world where they can play on the slides and go to a broadway play and play lazer tag without fear or restrictions. Just to live and be without hesitation.

    As we usher in the new year, I am hopeful. For me every new year brings a quiet hopeful expectation that good things are coming. Even after this year and looking ahead at the horizon, I still have that longing and expectation, if not even more than previous years. Good is coming. Life more abundant. In the face of uncertainty and seemingly hopeless darkness, I choose to hold onto hope. This is not how the story ends.

    So while we usher in 2021, I encourage you to hold onto hope. Believe good is coming no matter how dark the story may seem right now. There is still much in the world that is good and beautiful. There is still much to this story that is unfinished.

    So lets celebrate the good that is coming. Lets celebrate life more abundant.

    Here’s to a new year… a new page unturned… a new beginning. A quiet hopeful expectation that good is on the horizon.

    You will start with a good quality raspberry sorbet and your favorite rose champagne.

    Using about two scoops of sorbet per champagne glass, you will then slowly pour the champagne over the sorbet.

    Sip and serve with a spoon to scoop out all that delicious Raspberry Rosé Champagne!

    Not a fan of alcoholic drinks? You can easily make this non alcoholic with sparkling cider, sparkling juices or even a non alcoholic champagne!

    Raspberry Rosé Champagne Float

    Start off your New Years Eve with this incredibly easy raspberry rosé champagne float! This dessert cocktail is about as easy as it can get and is so refreshing!

    Ingredients

    • 1 bottle of your favorite rose champagne
    • 1 pint good quality raspberry sorbet

    Instructions

    • Place 2 scoops of sorbet in a champagne glass or large wine glass. Pour rose champagne over the sorbet and top off with fresh raspberries, if desired. Allow to melt while you sip or eat with a spoon. Enjoy!!
