    Artichoke and Kale Chicken Bake

    This Easy Cheesy Artichoke and Kale Chicken Bake is reminiscent of an artichoke dip, but even more delicious! Full of tender chicken and good for you vegetables, this incredible casserole is sure to become a new family favorite! Perfect for those chilly fall and winter evenings when you need a hearty and homey dinner to fill you up. 


    I am so excited to share this amazing dish with you all today! Its creamy, cheesy, and loaded with chicken and veggies. It quickly became a new family favorite and I am sure it will become a new favorite for your family, too! And did I mention its easy? We have so many fancy dishes that we regularly make (which in time will make their way over to the blog), but sometimes the easiest dinners can be the most comforting and delicious. Especially after a long day or work week. Or a long homeschool week. Anyone out there that can relate?

    Recently we set out on our homeschool journey and we are loving it! The freedom that comes with the homeschool life fits our family so well, and I know our daughter will (and is!) going to thrive. Its a beautiful thing to watch and be apart of. Now, when she has a hard day at school, or is discouraged with whatever she is facing, this time around  I can be there for her. I can see her highs and lows at a new level when it comes to her education. Creating a safe, joyful and wonder filled home learning environment is what I aim to create. A place for her to be, blossom and thrive to the best of her abilities.

    But, it takes time. It takes patience. It takes even more of our energy as nurturers. But it is so worth it. And sometimes on those extra busy days you just need an easy, hearty and homey casserole to fill you up. I believe that is why casseroles can be some of the best most cherished recipes. The kind that are passed down generation after generation. Recipes that comfort, nourish and remind us of the joys that are found in simple things.

    As I am writing this, the windows are open and the breeze feels especially fallish today. It was even a bit cold on our afternoon walk, which is a complete turn around from yesterdays late summer heat. Its so refreshing to feel the change in the air! Let us embrace the coming season with good food, family and friends, as we linger around the table and share in the beauty of a life well lived.

    Easy Cheesy Artichoke and Kale Chicken Bake

    This Easy Cheesy Artichoke and Kale Chicken Bake is reminiscent of an artichoke dip, but even more delicious! Perfect for those approaching chilly fall and winter days when you need a hearty and homey dinner to fill you up.

    Ingredients

    • 3 cups shredded rotisserie chicken
    • 4 bunches fresh kale, rinsed and dried, tough stems removed, leaves chopped, (about 3 cups)
    • 4 tablespoons olive oil
    • 1 large onion, finely chopped
    • ¼ cup all purpose flour
    • 1 ½ cups heavy cream
    • 2 cups chicken broth
    • 1 teaspoon garlic powder
    • 1 16 oz can artichoke hearts, drained and chopped
    • ½ cup grated parmesan cheese
    • 1 cup grated asiago cheese
    • ½ cup panko bread crumbs
    • salt and pepper to taste

    Instructions

    • Preheat oven to 400 degrees.
    • Bring a large pot of salted water to a boil, add the kale and cook for 2 minutes. Drain and pat excess water with a paper towel. Set aside.
    • Heat the olive oil over medium high heat and add the onion. Cook for 5 minutes until the onion is soft. Sprinkle the flour over the onion, stir well and cook for 1 minute. Slowly whisk in the cream, stirring constantly to dissolve the flour. Add the chicken stock and garlic powder. Add the chicken, kale and chopped artichoke hearts. Simmer for a few minutes and adjust salt and pepper to taste.
    • Add 1 cup of the asiago cheese and stir to combine. ;Add to a buttered casserole dish and top with parmesan cheese and then the panko crumbs. Cook in the oven until bubbly and the panko turns golden brown, about 15 minutes. Enjoy!
