The entire year of 2020 has been full of so many surprises for our family. Homeschooling being one of them.
I always wanted to homeschool but the timing was never quite right. At least I didn’t think the timing was right. But thankfully God always has the best timing. You know when you make a decision, or something shifts in your life and you just know down to the deepest parts of your being that you are exactly where you’re supposed to be?
With all the many changes around us in the midst of COVID world, it’s easy to get distraught by all the hard changes. But even in the midst of uncertainty there is so much good happening, you may just need a new perspective to see it. For so many people there has been a reset of priorities, a shift of desires, and even dreams rediscovered. We have learned to slow down, realign ourselves and shift our lives. Some of that shifting has been hard, really hard at times, but I believe this season has a lot of beauty to be found even if you have to dig through the ashes to find it.
Seasons come and seasons go. What will this season teach you? What will it grow in you? The season will shift again just like the physical seasons that come. Even now summer is hinting of autumn. There’s a slight change in the air beckoning us to embrace the change that will inevitably befall us.
Speaking of fall.. I know I am a bit early to be getting overly excited for all the fall things, but I am so ready for cozy weather. Watching summer slowly collapse into autumn makes my heart happy. All the homeyness and extra family time are the best.
Home is where my heart is and what better way to celebrate the coming cozy season than with a good ol’ comfort dish like this Creamy Bacon Mushroom Chicken Skillet.
Creamy Bacon Mushroom Chicken Skillet Details
This Creamy Bacon Mushroom Chicken Skillet tastes like you’ve been cooking all evening, but really it’s pretty quick to put together. The perfect dinner when you need something easy on a busy weeknight, or even if you want to impress dinner guests!
This one pan meal is made extra creamy by the use of gruyere cheese, which adds a lovely gourmet touch. A type of Swiss cheese, gruyère is made with whole milk and is perfect for melting! If you are unable to find gruyère you can substitute with any white cheese such as a creamy gouda, fontina or even sharp white cheddar.
The shallots and mushrooms pair so well with the creamy white wine sauce and give this chicken skillet an extra cozy and hearty vibe.
What you need for this Creamy Bacon Mushroom Chicken Skillet
Bacon, mushrooms, white wine, cream, gruyere cheese… does it get any better? This is one of our favorite comfort dishes when the weather cools down, but it’s also great all year long! Perfect when you need something quick, easy and delicious.
Here is what you will need:
- chicken thighs– I love chicken thighs for this dish but chicken breasts would also work great! Out of chicken? Pork would be another great option.
- olive oil– for sautéing
- thyme– dried or fresh will work great. If you use fresh thyme, add one tablespoon rather than one teaspoon dried.
- shallot– I love shallots for their sweet, garlicky flavor! If you don’t have shallots on hand a regular onion will also work great.
- mushrooms– any mushroom variety works.
- bacon– I like to get a high quality thick cut piece of bacon for this recipe
- heavy cream– for making the sauce nice and creamy!
- white wine– the wine adds so much flavor. Find a white wine that is nice and dry.
- garlic powder– garlic makes everything better. Use more or less to your liking.
- gruyere cheese– a type of Swiss cheese, gruyere is the perfect pairing in this chicken skillet!
- salt and pepper to taste
How to make this creamy chicken skillet
This super easy Creamy Bacon Mushroom Chicken Skillet is quick, hearty and so comforting! Made in less than an hour it’s the perfect busy weeknight meal.
Here is a quick rundown…
- First you will chop the bacon and cook in a pan over medium high heat. When the bacon is nice and crispy, remove to a paper lined plate to drain the grease.
- Season the chicken thighs on both sides with salt, pepper and garlic powder (eyeball it).
- Next, sear the chicken! Add the olive oil to a large pan and sear the chicken on both sides, about 3 minutes per side, or until nice and golden. Remove to a plate and set aside. Don’t worry about the chicken being cooked through- it will cook again.
- Chop the shallots and mushrooms. Add an extra Tablespoon of olive oil to the same pan used for the chicken if needed and sautethe shallots and mushrooms until the shallots are translucent and the mushrooms are starting to brown. Add a few grinds of salt, pepper and the dried or fresh thyme.
- Lastly, add the bacon back to the pan, the heavy cream, white wine and cheese. Bring to a gentle boil and turn the heat down to a low simmer.
- Add the chicken thighs back into the pan with the sauce and cook until they are fully cooked through, about 5-10 more minutes and the sauce has thickened. Season with sauce with additional salt, pepper and garlic if desired.
- EAT.
And that’s it! So easy right?

Creamy Bacon Mushroom Chicken Skillet
Ingredients
- 4 boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 2 large shallots, finely chopped
- 8 oz cremini mushrooms (baby bella)
- 6-8 slices, extra thick cut bacon, cooked and chopped
- 1 cup heavy cream
- ¼ cup white wine
- 1 teaspoon garlic powder
- 1 cup shredded gruyere cheese
- salt and pepper to taste
Instructions
- Chop the bacon and cook in a medium pan over medium hight heat until the bacon is crispy and cooked through. Set aside on a plate lined with a paper towel to drain the excess grease.
- Season the chicken thighs on both sides with salt, pepper and garlic powder (eyeball it). Add 2 tablespoons of olive oil to a large the skillet over medium high heat. Sear the chicken on both sides until browned, about 3 minutes per side. Set aside on a plate. Don't worry about cooking the chicken through, it will finish cooking later.
- Chop the shallots and slice the mushrooms. Add an extra tablespoon of olive oil to the same pan used for the chicken if needed and cook the shallots and mushrooms until the shallots are translucent and the mushrooms turn golden. Add the thyme and a few dashed of salt and pepper. Mix well.
- When the mushrooms are golden, add the bacon back to the pan. Add the white wine and allow the wine to cook off, about 1 minute. Next add the cream and cheese. Bring to a gentle boil and turn the heat down to a low simmer until the sauce begins to thicken, about 5 minutes. Add the chicken thighs back to the pan and cook until they are cooked through, about 10 minutes more. Season sauce with additional salt, pepper and garlic powder if needed. Serve with potatoes, wild rice or pasta. Enjoy!
