    Why we love these Cinnamon Cranberry Pecan Puff Pastry Pinwheels:

    With New Years Eve approaching, these amazing cinnamon cranberry pecan puff pastry pinwheels are the perfect appetizer to serve up for all the holiday festivities!

    It dawned on me yesterday that New Years Eve is THIS WEEK. I seriously cannot believe the year is about over! Many will be happy to put 2020 behind them, but as hard of a year this has been there is still so much to be thankful for. Before the year comes to an end, I encourage you to look back and see all the ways growth found a way in your life even in the midst of uncertainty.

    “Life, uh…. finds a way.” (…don’t you just love Jurassic Park?! Ha)

    Moving along now.

    Looking forward, I am so excited for the New Year. There is still a lot of questions and uncertainties in the world that wont magically disappear when the clock strikes midnight, but I know where my hope comes from, and I know there is still much to look forward to.

    So no matter what your New Years looks like, take the time to reflect and relish in all the good that happened this year. Its easy to focus on the bad, but I’m sure you can find so much beauty when you choose to look deeper.

    So if you’re looking for a recipe to make your New Years feel a little extra special this year, these puff pasty pinwheels are a great way to elevate your evening without spending too much time in the kitchen.

    These cinnamon cranberry pecan puff pastries are so incredibly easy and delicious and you don’t even need a crowd to enjoy them. I won’t judge if you eat them all to yourself… they’re that good! Another bonus? They can be made as an appetizer or even as a dessert! They’re sweet without being too sweet, and have just the right amount of cinnamon to keep them feeling festive.

    Using store bought puff pastry sheets make these way too easy… So lets get to some of the basics!

    How to make Cinnamon Cranberry Pecan Puff Pastry Pinwheels:

    Store bought puff pastry sheets are a lifesaver and come out perfect every time. One day I would love to make homemade puff pastry dough, but in a pinch, store bought is great. You can find puff pastry dough in the freezer section of most grocery stores.

    Before you begin, you can either allow one puff pastry sheet to thaw at room temperature for 35-40 minutes, until soft enough to work with, OR you can heat the frozen puff pastry sheet in the microwave for 15 second intervals until it softens up. Just be careful not to overheat the dough; if using the microwave method, heat JUST until the dough begins to soften and is easier to unfold.

    Melt three tablespoons of butter.

    Brush two tablespoons of butter (eyeball it) all over the pastry sheet then sprinkle with ¼ cup cinnamon sugar.

    I like to have a jar of cinnamon sugar on hand. If you don’t have any on hand measure 1 cup white sugar with 3 tablespoons cinnamon. (or more cinnamon to your preference). Store in an airtight container in a cool dry place.

    Sprinkle all over with the chopped pecans and dried cranberries. Gently press mixture into the dough.

    Starting at a short end, roll up the dough into a tight log like cinnamon rolls. Brush the remaining tablespoon of butter all over the log. Using a sharp kitchen knife cut the log into about 10-12 rolls.

    Place the rolls on a parchment lined baking sheet. If any of the filling fell out while cutting, gently press it back into the tops of the rolls.

    Bake for 15-18 minutes, or until lightly golden. EAT!
