    This one pan Chicken in Wild Mushroom Balsamic Cream Sauce is the perfect dinner to make when you need something quick but full of flavor. Tender chicken, hearty mushrooms and a delicious balsamic cream sauce, this recipe is sure to impress!

    Chicken… mushrooms.. and delicious balsamic cream sauce. The combination is just perfect. This one pan Chicken in Wild Mushroom Balsamic Cream Sauce has been a family favorite for years, and it never disappoints. Plus, its super easy and can all be done in one pan (yay easy cleanup!), so you can have this on the table in less than an hour giving you more time to spend the rest of the evening relaxing.

    Easy, wholesome dinners are a must around here and I am sure they are for you, too. Having that extra time in the evening for a walk, a bath, or to read a book- whatever makes your heart come alive, is so important.. especially with how intense the world is right now.

    The world seems to be falling apart. But we have a choice every day how we are going to allow the heaviness of the world affect us. Sometimes its hard to step away from social media or the news, but its also hard to live under the cloak of heaviness and despair. There is so much hopelessness circulating in the world right now, but that doesn’t have to the theme in our homes and in our minds. We have the power to choose what narrative we are going to live under. Let us choose to live a life that is life giving.

    As it is now, I believe in the coming months it will be especially important to distance ourselves from the swirling negativity all around us; to find  what brings us peace in this unprecedented season we have all found ourselves in.

    What brings you peace? What are some little things that bring you joy? Whatever they are… go do them. Make room to grow, discover, enjoy and love again. Don’t let the world steal your heart. Don’t let social media or the news steal your mind.

    For me, one of the ways I find joy and peace is by cooking or baking something delicious. Its a way for me to unwind and have some time to experiment and create. My kitchen is like a safe place, an anchor, a place I know will always be there for my family to gather. No matter what is happening in the world, when we come together around the table…everything feels right again.

    Honestly what makes this dish so great is the sauce. I feel like that is true about many recipes, but this one particularly stands out. You just cant get enough of it. Its so delicious. Like.. lick the plate until its gone kinda’ good. I definitely recommend serving this over wild rice or orzo pasta to absorb all that incredible sauce. Mmmmm.

    Chicken in Wild Mushroom Balsamic Cream Sauce

    Tender chicken smothered in a wild mushroom balsamic cream sauce. So easy and oh so delicious!

    Ingredients

    • 2 tablespoons olive oil
    • 3 tablespoons butter
    • 4 boneless, skinless chicken thighs or breasts
    • 8 oz white mushrooms, sliced
    • 8 oz cremini (baby bella) mushrooms, sliced
    • 2 shallots, diced
    • 3 cloves garlic, minced
    • 1 teaspoon dried thyme
    • 1 teaspoon garlic powder
    • 2 tablespoons all purpose flour
    • 1 ½ cups chicken stock
    • 1 tablespoon balsamic vinegar
    • 3 tablespoons heavy cream
    • salt and pepper to taste
    • wild rice or orzo pasta for serving

    Instructions

    • In a large skillet over medium high heat, add the olive oil. ;Season the chicken liberally with salt and pepper. Add chicken to the hot skillet and brown about 4 minutes per side. Remove chicken from pan and set aside. 
    • To the same skillet, add the butter. Once the butter melts add the diced shallot and cook until the shallot becomes soft and starts to become translucent, about 3 minutes. Add the minced garlic and cook for 1 more minute. Next add the mushrooms. Season with the thyme, garlic powder, salt and pepper and cook the mushrooms until they begin to brown about 8 minutes. 
    • Sprinkle the flour over the mushrooms and stir well. It will look clumpy. Cook for an additional minute. Whisk in the chicken stock, balsamic and cream. Add the chicken back to the pan. Bring to a gentle simmer until the chicken is cooked through and the sauce begins to thicken. Season with salt and pepper to taste. Serve with wild rice or orzo past. Enjoy!

      I had been wanting to make this one and it’s as good as it looks! The sauce makes it. It has a great flavor. I used chicken breasts but will use thighs next time because they are less dry. Wonderful!
