    Chewy Toasted Oats and Honey Granola Bars

    These chewy toasted oats and honey granola bars are made with wholesome ingredients that are sure to leave you feeling great. Loaded with toasted oats, pecans, and cranberries- these chewy bars are perfect for snacking or on top of yogurt!

    Happy Tuesday, everyone!

    Today I am getting back to basics with these amazing oats and honey granola bars. Because sometimes you just need a good granola bar!

    Here in Northern Nevada we are having a break from all the cold wintery days. For two days straight, the weather has been so warm and spring like- which has gotten me in the mood for all the warmer days ahead! So when trying to decide what recipe to post next, I figured this simple granola bar recipe was perfect for such a spring like day. I mean, just look how pretty these bars are! The flowers were the perfect added touch in these photos, and have got me dreaming for my spring garden.

    Why we love these chewy toasted oats and honey granola bars:

    Kid approved, these oat and honey bars are perfect for a quick snack, and especially delicious with some vanilla yogurt. My whole family absolutely loves these chewy granola bars, and I know yours will, too!

    Unlike most store bought granola bars, these toasted oat and honey bars are packed with wholesome ingredients, but aren’t sacrificing on flavor. With just the right amount of chewiness, these are hands down the best homemade granola bars you will ever make!

    Sweetened with honey and coconut sugar, these bars are healthier than most you would find in the store. The honey and coconut sugar combo gives these bars the perfect amount of sweetness and richness that is just way too good.

    You can easily switch out the ingredients to your liking! Don’t like pecans? You could add almonds! Not a fan of cranberries? Add a dried fruit you do love! These bars are so versatile, and so fun to make your own!

    So lets make some granola bars…

    A key to making these oat and honey bars extra delicious, is to toast the oats beforehand!

    On a parchment lined cookie sheet, add the oats and pecans and toast for about 10 minutes until nice and toasty. Next, add the coconut flakes. Toast for an additional 5 minutes, just until the coconut begins to turn brown. Coconut flakes brown fast, so keep an eye on it!

    Add the oat mixture to a large mixing bowl and add the cranberries. Allow to cool while you start on the honey mixture.

    In a medium saucepan, add the honey, coconut sugar, butter and salt. Bring the mixture to a gentle simmer, and cook until the coconut sugar is dissolved, about 5 minutes. Add the vanilla extract. Set the honey mixture aside to cool for 15 minutes (or else it will melt the chocolate chips!).

    After the honey mixture has cooled, pour it over the oat mixture and stir to combine. Fold in the chocolate chips. Line a 9×13 inch baking dish with parchment paper. Spread the granola mixture and press down with the back of a spoon or spatula. Refrigerate the oats and honey bars for at least an hour, until they are hardened enough to cut into desired squares. Enjoy!

    And that’s it! The most delicious and easy homemade oat and honey bars EVER. These can be eaten in so many ways, but my favorite would be crumbled on greek yogurt for a healthy snack. SO. GOOD!

    Ingredients

    • 2 cups rolled oats
    • 1 cup chopped pecans
