    Brown Butter Oatmeal Chocolate Chip Cookie Skillet

    This Brown Butter Oatmeal Chocolate Chip Cookie Skillet is a delicious and incredibly easy way to enjoy a twist on a traditional chocolate chip cookie! Perfect for a crowd, or when you just want a really, really big cookie all to yourself. Hey, I’m not judging. You gotta do what you gotta do, right? 

    So what makes this Brown Butter Oatmeal Chocolate Chip Cookie stand out besides it being cooked in a skillet like a pazookie? I’m glad you asked.. the secret is definitely browning the butter first. Generally butter makes everything better, right? Right. But that is especially true if said butter is browned butter. Thats the ultimate level of buttery deliciousness in my humble opinion. Definitely worth the extra step.

    Browning butter is easy and adds so much flavor. Once you experience the delicious buttery, nutty, almost caramel flavor there is no going back. (hint: its my secret step for the ultimate rice Krispie treats)..

    So lets get browned butterin’!

    For this recipe, or anytime you wish to brown butter, add the butter to a skillet over medium high heat. Once the butter melts, it will begin to slowly foam and turn a light brown. As the foam subsides you will notice the butter getting a darker brown and will start to be fragrant. At that point cook for about 30 more seconds, being careful not to burn. Immediately remove from the heat so that it doesn’t continue to cook. And there you have it! Browned butter to be used for whatever recipe you are using it for.

    Now that I have spent WAY too long talking about literally just butter, lets get to the delicious details about this cookie.

    Its ooey-gooey chocolatey, with hints of oats, and did I mention butter? This Brown Butter Oatmeal Chocolate Chip Cookie Skillet is pretty much perfect. Served straight out of the oven with some ice cream is the best way to enjoy it. You can thank me later.

    Brown Butter Oatmeal Chocolate Chip Cookie Skillet

    Ingredients

    • 1 cup butter
    • 2 cups flour
    • ½ cup rolled oats
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • ¼ cup sugar
    • 1 cup packed brown sugar
    • 2 eggs
    • 1 tablespoon vanilla
    • 2 cups semi sweet chocolate chips

    Instructions

    • Preheat oven to 325 degrees;In a 12 inch cast iron skillet, brown the butter over medium high heat, until a deep brown is reached and butter has a nutty fragrant flavor. (see notes above for browning butter);Allow the butter to cool off for about 20 minutes at room temperature. (if you add a cast iron skillet to the refrigerator after being hot you run the risk of cracking the cast iron)
    • Beat the eggs and vanilla in a small bowl. Add to the butter. Mix well. ;In a large bowl sift the flour, oats, baking soda and salt. ;Add the flour mixture to the butter mixture until fully combined. Add the chocolate chips. Mix well. If the dough seems really warm to the touch, wait an additional 10 minutes before adding the chocolate chips to prevent melting them into the mixture.
    • Spread evenly in the pan and bake 25-30 minutes until the edges are slightly brown. Its ok if the center is a bit gooey. Serve with vanilla bean ice cream. Enjoy!

      In your step by step instructions, it does not tell you to add the brown sugar or the white sugar. They are listed in the ingredients, but not in the instructions. Wanted to let you know so others don’t make the same mistake.
