This popular Mexican tequila cocktail takes on a new twist with blackberry and chamomile! Made with fresh squeezed grapefruit and sweetened with a simple chamomile syrup- these cocktails are perfect on a warm summer evening.
Light, refreshing and bursting with blackberry chamomile flavor- this paloma is the perfect end of Summer cocktail to make. These no fuss cocktails are a sure way to fancy up any brunch or dinner!
I originally had these set to post for this past Spring, but due to some family health issues, I had to push these off until now. It’s been a few months since I posted a new recipe, but we are still cooking and baking up a storm and have quite a few goodies to share with you all soon! This summer has honestly flown by, and I for one, am so excited for the start of fall next month!
These cocktails are a great end of summer drink and are so, so easy to make!

What is a paloma?
A paloma is a tequila based cocktail most commonly prepared by mixing lime, tequila, and grapefruit soda. For this version, I used fresh squeezed grapefruit juice, fresh muddled blackberries, and a simple chamomile syrup for an extra refreshing twist on the classic.
Ingredients you will need:
- good quality tequila
- grapefruit
- chamomile tea
- sugar
- fresh blackberries
- crushed ice
- sparkling water (optional)
- sugar or salt for the rim (optional)
- fun drinking glasses
How to make blackberry chamomile palomas:
These fun cocktails couldn’t be any easier to make!
You will first start by making a super simple chamomile infused simple syrup. When the chamomile simple syrup is done cooling, into a drinking glass you will add a few tablespoons of the simple syrup to taste, the fresh squeezed grapefruit juice, good quality tequila and a few fresh blackberries. Muddle the blackberries with a wooden spoon to crush them to release their juices. If you wish to discard the blackberry seeds, strain the cocktail through a fine mesh strainer. Lastly, add crushed ice and top with a splash or sparkling water, if desired.
Garnish with fresh chamomile and blackberries, if desired. Drink enjoy!

Blackberry Chamomile Paloma
Ingredients
Chamomile Simple Syrup:
- 2 chamomile tea bags
- ¾ cup water
- ⅓ cup sugar
For the Cocktails:
- 3 ounces good quality tequila
- 4 tablespoons chamomile simple syrup, or to taste
- 3 ounces freshly squeezed grapefruit juice (about half of one grapefruit)
- 4 fresh blackberries
- crushed ice for serving
- sparkling water to top off (optional)
Instructions
Chamomile Simple Syrup:
- In a small sauce pan combine the water and sugar and bring to a low boil. Simmer for 3 minutes, or until all the sugar is dissolved. Add the tea bags and cover. Steep for 10 minutes. Remove the tea bags and allow the syrup to cool, about 15 minutes.
For the Cocktails:
- In a drinking glass, add the fresh squeezed grapefruit juice, chamomile simple syrup (add more or less to taste), tequila and blackberries. Using a muddler or wooden spoon, gently crush the blackberries until they release their juices. Strain the mixture through a fine mesh strainer to remove the blackberry seeds, if desired. Add desired amount of crushed ice and top off with the sparkling water. Give the drink a stir, adding more simple syrup or fresh grapefruit juice as desired. Garnish with a few springs of fresh chamomile flowers and blackberries. Drink and enjoy!
