This 30 minute Rustic Zuppa Toscana is one of my husbands favorite soup recipes, and it’s one of the easiest, most flavorful soups you will ever make!
30 Minute Rustic Zuppa Toscana Details:
The perfect balance of creaminess, spiciness and hearty veggies- this rustic zuppa toscana is always a family favorite!
ingredients you will need for rustic zuppa toscana:
- olive oil
- spicy or mild Italian sausage (we prefer spicy sausage)
- russet potatoes
- onion
- garlic cloves
- fresh or frozen kale
- chicken broth
- heavy whipping cream
- freshly grated parmesan cheese to top
- homemade crusty artisan bread for dipping
What is Zuppa Toscana?
Zuppa Toscana translates to ‘tuscan soup”, but in Italy it is referred to as “Minestra di Pane” soup. Olive Garden made zuppa toscana popular in North America with a spicier, creamier version of the authentic soup. This 30 minute rustic zuppa toscana is far better than Olive Garden’s, and is so incredibly easy to make!
How to make Rustic Zuppa Toscana:
This soup is ridiculously simple to make, so it’s perfect on a busy weeknight!
Here’s a quick rundown:
In a large pot you will heat the olive oil over medium high heat. When the oil begins to simmer, add the sausage. Break the sausage links up with the back of a wooden spoon and brown the sausage stirring often. Next, you will add the chopped onion and sauté until the onion begins to turn translucent.
When the onion is soft and translucent, you will then add the minced garlic, sliced russet potatoes, garlic powder if using (I like mine extra garlic-y) and a few grinds of salt and pepper.
Add the chicken stock to the pot and bring the soup to a simmer. Simmer until the potatoes are cooked through and tender. When the potatoes are ready, turn the heat to low and add the heavy whipping cream and freshly torn kale. Adjust any seasonings to taste, and serve topped with freshly grated parmesan cheese and crusty bread for dipping.

30 Minute Rustic Zuppa Toscana
Ingredients
- 1 tablespoon olive oil
- 1 lb. spicy Italian sausage
- 2 large russet potatoes, sliced in half, and then chopped into ¼ inch slices
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups fresh kale, torn
- 6 cups chicken broth
- 1 ½ cup heavy whipping cream
- 1 teaspoon garlic powder (optional)
- salt & pepper to taste
- freshly grated parmesan cheese, to serve
Instructions
- In a large pot heat the olive oil over medium high heat. Remove the sausage links from the casings. When the oil begins to simmer, add the sausage. Using a wooden spoon, break the sausage links up and brown the sausage stirring often, about 8 minutes. Add the chopped onion and sauté until the onion begins to turn translucent, about 5 minutes more.
- Next, add the minced garlic, sliced potatoes, garlic powder if using (I like mine extra garlic-y) and a few grinds of salt and pepper. Add the chicken stock to the pot and bring the soup to a simmer. Simmer for 10 minutes, or until the potatoes are cooked through and tender. Turn the heat to low and add the heavy whipping cream and kale. Adjust salt and pepper to taste. Serve with freshly grated parmesan cheese and crusty bread for dipping. Enjoy!
